Mango Salad (Cold)


Mangos...such a lovely golden yellow coloured sweet (when ripe of course!) tropical fruit. You can eat it raw, ripe, anywhere between raw and ripe..each stage you get a different taste and all from the same fruit...amazing isn't it! Here in UK I have seen ripe reddish-green mangos with sweet and sour yellow centre...They are hardly very sweet. So, I thought of making a cold salad which you can enjoy as an evening snacks also ticks the box of one portion of your fruit and veg of the day! How about that!!

Ingredients:

1 Mango (pealed and cut into small pieces)
1 tsp red chilly powder
1/4 th of a red onion chopped (optional)
1 tsp of olive oil
pinch of sugar

Method:

Simply mix all the ingredients together and serve it cold or room temperature..that's it..simple as that...no cooking involved.

Chickpea Salad (Warm)

Hello all! Sorry for not being regular here..I went on a long holiday to India...and enjoyed a lot...but that cant be an excuse for not being regular..so here I am with a quick and easy but yummy recipe for cold and lazy afternoons...

Ingredients:

1 can of chickpeas (drained)
1 onion (chopped)
1 green chilly (chopped)
2 cloves of garlic (pealed and chopped)
1 tsp cumin seed (whole)
1 tsp red chilly flakes
Few drops of lemon juice
Oil for frying
Salt to taste

Method:

Heat the oil in a pan then add the cumin seeds, garlic and the chilly flakes. Need to fry for a minute so that you get the aroma of the garlic then you add the onions and the chopped green chilli in to the pan and fry till they are soft. Then add the chickpeas and continue frying for 2-3 min. Add the few drops of lemon juice and season it well before taking off the heat and serve hot.

Optional: Some fresh coriander leaves will add another dimension to the dish.
